Single Serving Ice Cream Cake Recipe

These were so good and super simple.  Once the layers are prepared, they come together quickly.


 You'll need:
  • one cake mix 
  • one brownie mix
  • eggs
  • milk (we used unsweetened almond milk)
  • large bucket of ice cream (we used chocolate)
  • butter
  • oreo cookie pie crust
  • animal crackers
  • plastic party cups
optional: sprinkles, Reddi-wip, fudge syrup, flavoring (we used strawberry)

Method:

First, grease a large cookie pan with edges, one like this.

Bake the cake following box directions but with the following modifications: 
  • add one more egg (or two to be rich)
  • double the oil, but substitute melted butter instead of oil
  • substitute milk instead of water (I use unsweetened almond milk.) 
This idea originally came from the comments in this post, which has a recipe for making bakery-like cupcakes starting with a mix.

My mix was a yellow cake mix from The Dollar Tree.  Sara wanted strawberry, so I added strawberry flavor to taste.  Any flavor could be added.  The yellow mix didn't call for oil, so I didn't add butter.  Still, it was super moist.

Pour the batter into the large cookie pan with edges.  (I don't know what you actually call those pans, but I use them for pizza and cookies.)  Bake 350 until done 10-15 minutes.

It will be thin, so don't over bake.  If a toothpick comes out clean, it's done.

Let cool.
Use a round cookie cutter to cut out circles. OR tear up into one inch pieces.

Again:

Bake brownie mix according to directions.
Let cool.
Tear up into small pieces.

Put animal crackers into ziplock baggies.  Place on top of cutting board.
Smash to smithereens. 
Here we are smashing pretzels too, but I don't recommend it.  The animal crackers gave more crunch.  Smashed oreos would be yummy also, but they didn't make our budget.

Before you begin to layer, allow ice cream to get soft.

Time to layer!

  • Place brownie pieces in bottom of cups.  Press lightly.
  •  Next, add a large scoop of soft ice cream.  Press lightly if needed. 
  • Now add the cake circles.
  • Follow with animal cracker smithereens (or oreos).
  • Add a second, smaller scoop of ice cream.  Press down. 
  • Break up the oreo crust and sprinkle on the top along with sprinkles or Reddi-wip or fudge syrup.

Put on a tray in freezer until frozen.  Allow some time to thaw a bit before eating.  Cheap, easy, and really good. done.
